A tricky and fine personality
Mondial BIO Organic is a complex coffee selection recently proposed by the Roaster San Francesco. It is a 90/10 blend of organic washed Arabica from Central America and Brazil and the best organic varieties of Robusta from Ethiopia and Indonesia. This blend, together with its companions Rosso Crema, Oro Intenso and Gran Gusto, is one of our coffee selections with the darker roasting: "Vienna Roast". The roasting process, according to the tradition of the roaster, is slow, about 20-22 minutes, and takes place through indirect heat exchange from wood fire. Thanks to the slow roasting process, essential oils leak onto the surface of the coffee beans.
An Espresso for meditation!
Mondial BIO Organic is a tricky and fine blend which amazes even the most skilled and competent taster. The washed Arabica beans, combined with a minimum percentage of Robusta, deliver an Espresso with a very interesting sensorial feedback. The cream is silky and evenly distributed over the entire surface. The aroma is intense, fruity and complex.
Borrowing a term from the wine tradition, in our opinion, this extraordinary product is a "meditation" Espresso. It is characterized by refined hints and marked aromas which take time to be felt by the palate, therefore it must be sipped slowly and savoured slowly. An Espresso BIO Organic can be combined with a dessert, but also alone it represents the worthy conclusion of a lunch or dinner.
